Daniel Raymond, a former chef in Paris and holder of a Michelin star, created the Le Borvo workshop in 1980, one of the first independent establishments in producing high quality smoked salmon.

This enthusiast who started his activity with only 2 employees has always strived to promote his flagship product and now has 70 employees. It has become the European benchmark in the gastronomic field. Indeed, in addition to the reputation forged among the great French restaurateurs, the reputation of the Raymond house has gone beyond our borders!

Building on his success, Daniel Raymond uses his expertise and offers, as a caterer, cooked dishes, terrines and verrines made without additives, colouring or preservatives.

During this course, plenty of resourceful information will be shared with you, namely, the species used, the origin, the processing methods, the ancestral and current method of preserving the fish, etc. You will also discover the different preparation processes: filleting, salting, smoking. The manual slicing performed right in front of your eyes will amaze you!

Each group is particular: the price is calculated with respect to the program, the town of departure, the participant numbers and the dates selected.
In a general way, a group is composed of at least 10 persons paying
Before any confirmation, an agreement will be signed between the two parts. It will detail all the services of the program over its duration.

Roadmap

7:30am :

Departure by coach to the Le Borvo family-led factory located near Auxerre.

 

After a coffee and croissant break offered during the trip, you will arrive in the world of salmon smoking, where you can enjoy a 400 square meter tour, which will end with a tasting workshop.

 

In addition to the tasting part, the workshop is educational, and the secrets of this profession will be shared with you: the different species, the geographical origin, the living environment, the food and the breeding techniques.

12:00pm :

(Around) Lunch at the factory, with drinks and coffee included.

Example of the menu:

Smoked salmon, Salmon escalope with green sauce, vegetable gratin, Cheese and Prestige chocolate crunch.

Drinks included: Kir as an aperitif, 25 cl of red or white per person, coffee.

2:30pm :

Expected arrival in the city Auxerre, bearing the “art and history” label, to embark on a mini-cruise along the Nivernais canal in the heart of the Yonne valley.

 

Before leaving, you will be able to take advantage of a free moment in the heart of Auxerre to appreciate the essentials: the clock tower, the charming Saint Nicolas square, the Saint Etienne cathedral with its 13th century stained glass windows, the former Saint Abbey Germain, and not to mention the charming half-timbered houses.
